The Journey from Another Supplier to Nelson
When the first Z Hotel opened in Soho in 2011, Russ Bodycomb, the Food & Beverage Director, initially opted for a commercial dishwasher from another well-known manufacturer. However, the lack of service and support led him to switch to Nelson following recommendations from local foodservice operators.
Expansion and Consistent Quality
Since that initial opening, Z Hotels has grown and is now a 14 strong chain with more in the pipeline. Also, the food and beverage side of the business has expanded and, as well as the breakfast buffet, every location features an all-day café with a simple, but popular, menu and a late-night bar meaning that the catering operation is always busy. “It’s not unusual for the hotels to service 350 covers a day,” explains Russ, “and, because they are spread throughout the day and evening, it means that the warewashers are used constantly.”
Solving the Noise Problem
Given the proximity of the commercial dishwashers and glasswashers to guest dining areas, noise could have been an issue.
